Gongfu rolled oolong

The classic way to drink a high-mountain or Tieguanyin: a hot pot, a quick rinse and a run of short steeps.

Leaf
6 g
Water
100 ml
Temperature
95°C
First steep
20 s +5 s · 7 steeps

That's 6 g of leaf per 100 ml, with water at 95°C (203°F). Style: Gongfu. Tea: oolong tea.

Step by step

  1. Warm the gaiwan and cups with boiling water and pour it away.
  2. Add 6 g of leaf, lid on, and give it a shake to wake the aroma.
  3. Rinse: cover the leaf with water and pour it off straight away.
  4. First steep 20 s, then add 5 s each steep.
  5. Pour out every drop each time. Keep going while it still tastes of something.

The steeps

7 steeps, in seconds: 20 · 25 · 30 · 35 · 40 · 45 · 50. Pour out every drop between them, and stop when the leaf tastes of little.

Log it as you brew. Steepbook opens a session with these numbers, scales the leaf to your teaware, times every steep and remembers how it tasted.
