Sencha in a kyusu

Japanese green the Japanese way: a long first steep, an almost instant second, then a longer third.

Leaf
5 g
Water
150 ml
Temperature
70°C
First steep
60, 10, 30 s

That's 3.3 g of leaf per 100 ml, with water at 70°C (158°F). Style: Kyusu. Tea: green tea.

Step by step

  1. Cool the water to 70°C by pouring it into the cups first, then into the kyusu.
  2. Steep 5 g for 1 minute without moving the pot.
  3. Pour out in small rounds across the cups, down to the last drop.
  4. Second steep 10 s, third 30 s, a little hotter each time.

The steeps

3 steeps, in seconds: 60 · 10 · 30. Pour out every drop between them, and stop when the leaf tastes of little.

Log it as you brew. Steepbook opens a session with these numbers, scales the leaf to your teaware, times every steep and remembers how it tasted.
